Organic sounds come from synths that haven't ingested any pesticides or hormones and the synth got to run around free range on a farm while it was growing up.

The etymology suggests anything from or reminiscent of an organism. Something that grows and develops, responds to its environment, or feels in some way alive, perhaps. I dunno; the more I think about it, the more prejudicial the term seems: as if everything else were somehow less.
