Bitwig Studio 8-track usable with 2 VST plug-in limit?

8-track comes bundled with hardware. I'm under the impression it's more like a demo than anything else. I get it, it's business and the company wants people to spend money and get the realthing(tm) next tier product or better.

Just get the full DAW. You can find one 2nd hand in the Buy/Sell subforum for half the price.

For my modest usage the full thing is overkill and I can't justify the cost. I come from Amiga Noisetracker 4 channels background! My goal is to learn and get used to a piano roll in a mainstream product that will see continuous development and support. For my needs - to paraphrase a famous figure - 8 channels ought to be enough for everyone. But 2 VSTs is nonsensical and crippling.

Forget about using Bitwig 8 or 16 track for serious music,they are both more akin to demos. Both are restricted to 16 bit audio export which is just plain silly in the day and age. If you want to use Bitwig you will have to cough up for the full version.
Ableton Live Lite 8 is a far different DAW as it allows audio export of up to 32bit and all tracks can use VSTs. If 8 tracks are enough for your compositions then its a genuinely good way to add pattern based composition to your toolbox. It comes free with hardware or is often sold here for $10 or so.
