why not just buy a Doepfer BS1 or BS2 A100 system for less than half that and have everything that does apart from the "ekko"

It's not worth it - that is what it cost - handbuilt and all.
A bit like I heard about Moog - everything built by staff which are co-owners of company etc.
A YT channel explained that is what you want to support buying a Moog.
SX-1 seems like Boutique Neutron, with most of patch bay removed - and 15 times the cost.
Up in that price range - Moog One 8 voice seems more like something I would put money on - and you got yourself polyphonic synth which is much more useful.

Yeah, even if I wanted to drop that kind of money on a monosynth, which incidentally will probably never happen, this one would not be it.
Ugly, vanilla, limited, and frankly not worth half what they’re asking.

I just got the prices for the Behringer System 55 modules. They all range from $60-80:
