When mixing, is there a way to make the volume fader move in bigger steps when dragging it up and down? For example -7, -6, -5, -4, and so on. And not getting those fine adjustment in between.
I think it would be an easy and fast way to create a rough mix and then fine adjust if necessary.

Use automation. There's that possibility.

A Volume Fader is supposed to be that way to have a gradual adjustment of the signal level without hearing steps.
As Calenberger suggested, use Automation. With the Pencil Tool, hold down the option key while dragging a line to create a stepped Automation Curve.
