Why is Ableton so slow to release updates?

They take a lot of time beta testing the upcoming versions of the program.
But I somewhat agree they are slow, specially on big feature updates. Version 10 was released more than 2 years ago, and we're still on 10.1

Because they made a shit show of version 8 integrating it with Max MSP way too soon. I was in the open beta back then saying it wasn't stable on my system, but they have a huge amount of sycophants in their beta team. I'm not trying to be a dick about it, it's just Live has the most ardent fans besides Reaper.
I've used it since v3 and since v8 they've slowed progress waaaay down. IMO it's now difficult to hunt bugs with all the possible issues integrating Max 4 Live brought in. It's a great program but they're definitely erring on the side of caution and have been for years, which IMO indicates it's still getting new customers, so there's not a lot of need to keep up with the competition.

Really? Why is each newer version less stable? (can’t say about v10 cause i got off the train)

MM definitely varies. I started on v3, that was rock solid. By v6 it was starting to fall over and by v9 it’s become way more common. I get lockups fairly often. I still use it in performance settings but i’m careful not to ask too much of it.

They were quite fast from v1 up to 8, from there they slowed down a lot. 8 as stated had quite a few problems at release.
Since 9 was released they have also focused on user request to an extent, they also had big 9.5 update which was free. They also developed Push so that must have taken resources.
I am quite happy with development speed right now, when cubase and some others get annual releases Live doesn't tax my wallet or overwhelms me with new features.

8 and 9 seem about the same crash-wise on my system, i guess i was exaggerating a bit. I’ve heard that v10 is more stable but i have no interest in updating because i don’t desire more features nor do i desire parting with more money. Agreed. I agree that the pace of updates is not as fast as other vendors, and new functionality is not introduced as regularly as other DAWs. But, look at the 9.5 update - it was massive. Many at the time said it as almost like getting a paid update for free; I expect the same with 10.x at some point - I suspect MPE is on the cards this year to pave the way for the MIDI 2.0 spec.

I'm assuming 10.5 will be released after the nice 90 day trial ends. Makes sense that the Max/MSP Integration caused a lot of headache. I also own Bitwig (and Logic, FL, Renoise ) and still like how fast and easy Ableton is. Just want them to keep up

Ableton Live is a mature product. There won't be updates until the team comes with some significant breakthrough.
Also, Live 10 is over 2 years old. There was free 10.5 update last year. They're probably preparing major features for version 11 now.
