What are the full blown iOS DAW alternatives to Cubasis? Garageband? Anything else that can function as a traditional/linear DAW, record audio, use AU instruments, etc.? I'm really asking.

I've tried everything but Cubasis and I avoided that one because the app store reviews indicated lots of crashes and bugs

Of everything else, Garageband is the least problematic. Garageband works really well on the iPad touch interface. It is well designed and easy to figure out. Everything I've tried just works. It has some significant limitations but that is the one I would use. Everything else has some sort of showstopper for me.

I guess that Apple will come with either a significant Garageband update, of bring a version of Logic to iOS... or do both. I think Logic on iOS is an eventual certainty as Apple is switching Macs to the same ARM processors as iOS uses.

Auria Pro completely soaks Cubasis in warm pee...

also there's N-Track, Audio Evolution Mobile, Bremme Multitrack Studio Mobile and a few others...

Auria Pro is very capable. Likely best in iOS. I don't like the workflow. It's like a desktop app ported straight to iOS and not developed for the iPad touchscreen. I found it clunky and not at all pleasant to use. I tried it for a while, then uninstalled it. I'd much rather just use my regular DAW's on my laptop or desktop machines. For iPad Pro, I want a DAW designed for the iPad Pro.

Cubasis has been ported over from a desktop app, Auria however has not. Whether you personally like its workflow or not does not change one tiny bit about the fact that Auria has indeed been developed for IOS from the ground up. Unlike Cubasis there is no other version for any other plattform.

I found Auria crappy on the touch screen... regardless of whether it is only on iOS, it is poorly designed for touchscreen and fussy and annoying to use. That is of course my experience with it.

I haven't tried Cubasis as according to lots of Cubasis 3 app store reviews it is crashy and buggy. So my Auria comment is not related to trying Cubasis.

Cubasis - easy to use app from a company with a successful track record of maintaining solid apps.

GarageBand - fun app.
Auria Pro - powerful app.

I prefer ease of use so I can focus on my work.

They released 4 updates since 3.0 and ironed out the reported pain points. We can use v3 now (with more powerful features) just like we can use their v2. A few minor issues in the Media bay, etc. which you’ll see me reporting on their forum soon.
