Is there one all-round utility that logs & displays all MIDI data being transmitted across any number of devices?

It's probably best to contact the Swiss Army about this...
I'm sure that they will tell you what they use

I don’t know if you’ve already tried it, but Midi-ox is a great all around midi/SysEx utility. I just went to the website, and even though it hasn’t been updated since 2011, I used it a couple of months ago to update a hardware OS for my Modor NF-1m. It’s about as Swiss army as it gets, and best of all, it’s free. You can also google for alternatives. I’m sure there are plenty of similar items for the Mac too, if that’s what you use. Cubase, Logic, and Digital Performer all have really decent midi utilities baked in from the good oil’ days when those programs were strictly midi sequencers to be used with hardware.

That one.
