I think that boils down to the question how much feedback you want to handle. Open betas are more welcoming (as I as a beta tester am doing you guys a favour, I find "applying" for closed beta testing a bit weird, but maybe that's just me), but may lead to less focused feedback, invalid bug reports and a lot of noise on your end. I'd also think that the right time to make a demo version available is now. Yeah, I guess that might annoy a few early bird buyers... but that seems a viable way to get some positive traction for what can be a great product after all. A few "wow!"s would be much needed after the -justified- complaints.
