How can I shift on note on stepp up or down when I have made mistake while playing.

When you're above the note, Insert will push the notes below down, Backspace will pull them up.

I don´t just want to shift the note regarding its possition, I want change its pitch.

Delete note and insert a new one ., what’s so difficult ?
Del . Key and azerty or qwerty for note pitches or read the manual

I am, actually.

What I meant is Renoise is the last DAW one should try without learning about it first, because it's unlike any other DAW. It's a tracker with DAW features.
