Live has clip gain. Are you talking about visually on the clip in the timeline? As to audio editing, I missed that at first until I realized you can do basically the same thing on the timeline, and with the aforementioned clip gain.

Where / how? I've spent 5 minutes yesterday trying all clip edges with all modifier combinations I could think of

I think that’s done By assigning a Midi controller knob to the Clip Gain and then just pick any clip in the arrangement and adjust the knob.
No idea it that works with v11. I’m out for the weekend.
