I've been wondering. The basic models seem available zhrough Amazon, but when you start to customize, you wait.

My 16gb MBP arrived about three weeks ago.
One con: I'm having about two crashes a week - they seem to be related to using an external monitor via an Anker USB hub, and I've had some weird behaviour when I open the lid - it takes quite a long time (compared with my old Windows laptop) for the Mac to make the second screen work.
Lots of pros: Performance with Ableton is pretty much as it's been sold: responsive, fast to load, handles multiple CPU-hungry synths like they're audio - 45 instances of Vital without any issues, and without an audio interface for most of the time. I don't do orchestral stuff so I've no idea how it would cope with that though. Some Mac OS things still irritate me but I'm figuring them out.

Maybe better because most AUv3 anyway does not run on M1 yet without a crash fest or major bugs. Some officially supported does work well, so I anyway stick to them.
But sadly also a lot unofficially Mac supported but which not opted out (so you see them officially in the Mac app store and can buy them there) does not work as well.
In this case dear developers better opt out or make it work.

Didn't recognize the 1080p monitor first boot:
Had to dig up a wired keyboard and mouse to start set-up.
The fun is just beginning. I was weirdly thrown by the connector options, having no idea what usb A or C was. I bought a cheap €20 4-1 usb-c hub, just used it to import pics from camera, works fine. After I get it configured for my wife, I'll bring it over to my workspace and download Logic.

The bits of info coming out on the new iMacs have me very excited. This iMac cost a bomb, I should be able to get a much more powerful unit for €1,000 less. Wonder if I'll be able to sell it?

BTW, it kills my €3,300 iMac on Civ VI. Logic is dowloaded, just have to download the extra content. Next will be getting my Fireface working. Then finding out what 3rd party stuff will work.

Got my peripherals sorted, basically midi keys, audio interface (kudos to RME!) and TM. My FF has to go directly into the usb A port, not the cheap usb3 to C hub. Same with the Superdrive—won't work via a hub, but it doesn't on my Intel iMac, either. But with everything going that I basically need, I have 1 open A port, and 1 open usb4 port.
I'm going to put Hive 2 and TrackS 5 on this machine, Scuffham Amps, too. Amazing how quickly you can chew into 256 GB (although it was more like 200).
EDIT: IK Track-S 5, Hive 2 and Amplitube 4 installed with no issues. Am installing ADD and ADK now. After I see how much storage is left, maybe I'll do Synth One.

I just ran an old project with 22 audio and 2 V.I. trx. On my 4ghz iMac, I always get an overload message as it hits the instrument tracks. The M1....one core goes up to about 27% and stays there. The others barely flutter. When it hits the instrument tracks, they don't budge, and no overload. This is in Rosetta mode.

finally got it.
a project that knocked my mini i7 into scorching hell and dropouts, plays without hiccups with barely running fan on the M1.
it's insanely well done, i can't really believe how good it performs.
i got 108 tracks on The New Logic Benchmark.
I'm running Logic native, and plugins are mixed bag of tricks.
Everything except youlean for some reason installed fine and works fine. (Even god ol' drumspillage v2.0.7 from 2014).
that's ~200 plugins thats working.
