I don't think we can do it but their is so much option in Cubase ...maybe I miss one...
Is there a way that, when I write a MIDI note in the editor, the note has the length of the last written note (without having to drag) and not the length of the grid definition ?

I believe copy->paste or duplicate by drag is the only way. Both require moving the resulting event to the desired pitch. To my knowledge there is not a "set quantize to current note length" key command or anything like that.
If you have to ask, you can't afford the answer
