Hi guys, I was wondering if it's already safe to update to Big Sur.
Is there a list with all compatible plugins and daws?

Unfortunately, neither of those lists is up to date.
I was planning on taking the plunge last weekend but ran out of time. I'll have to try it the next weekend (not this one). I'll need time to troubleshoot (just in case).

I'm no official voice on this--can only share my experience.
I did install Big Sur on my Macbook Pro (late 2013--Intel), and I haven't run into any problems using NI or Meldaproductions software. I think Melda has gone ahead and said they're OK with Big Sur, but NI has just a limited list that they say are OK, including Kontakt, Massive (not Massive X), FM8, Absynth, (but need to download updates on these). Nothing yet on Reaktor (but I've used it without problems so far).

Battery 4 is said to work as well. I got the beta at the same time as the Kontakt beta to test, but I didn't feel comfortable with a small partition for testing on my setup.
Cubase 11 Pro by all reports.
I need BFD3 to before I change. There is virtually no support for that at this point. FXpansion is ROLI except for BFD which is InMusic or something. No forum but for ROLI's now.
For once I want the new OS.
