There's something wrong with Arturia drawbar settings? In the 2 audio files, it seems that there's something playing an octave below, on both Arturia demos.

I haven't noticed that, I'll have to take a second listen. Two problems I've found; the manual says the 8th drawbar is the seventh harmonic, which the B3 doesn't have, the drawbars from 3rd to 9th are the 1st, 2nd, 3rd, 4th, 5th, 6th, and 8th harmonics. Also, the plugin has an option for the percussion labeled 'polyphonic'. The regular percussion on the B3 V, like a real Hammond, already is polyphonic; it is, however, single trigger. The control would be better labeled 'multi trigger'.

I do find Arturia's Hammond clone to sound better than I expected. It wouldn't be ny first choice when I can't use my Hammond, but it might be my second.
I wish I could sing as well as the voices inside my head...

Ray of GG-Audio is one of those developers that always delliver, and then some. Now he released Blu3 2.4, ready for Apple Silicon – and a free update, unlike some other devs, along with Spin.

Blu3 is one of my favourite virtual tonewheels. It has a character all of its own and can be tweaked ad infinitum.

I just discovered one of those clever little Blu3 features that I hadn't noticed before.

You can assign the Leslie switch (from chorale to tremolo and back) to the pitchbend joystick on any typical Roland keyboard! It's as close to operating a traditional halfmoon as you can get without actually having one available! Perfectly timed for my new little Roland A49. Kudos, Ray.
If it were easy, anybody could do it!

Yep B5 v3 is top regarding sound in my opinion but I find myself using Blue 3 the most because I much prefer the workflow and layout. B5 feels a little convoluted and clumsy to do certain functions.

I prefer B5 v2 over v3. V3 has too much intentional clicks and noises and other imperfections that I have to turn of before I get a to me usable sound. V2 is great, blue3 is great es well. I use both.

I've tried the demo of IK's B-3X and it is my second favorite after B5 V3 but as I already owned Blue3 and B5V3 I couldn't justify the price.

What really surprise me was how different organs came across so differently in context. It was hard for me to pick one that was best, but there were a couple that just seemed lacking. The other thing that I noticed is how important the Leslie is to the overall vibe.
And ain't we lucky to have so many choices!
