Are you using a Bluetooth keyboard with your M1 Mac mini?

Yep. It's a magic keyboard 2 from my old iMac. No connectivity issues whatsoever, Logic is faster than I've ever seen it. It is the only DAW I currently use, and it's great!

Do you actually experience performance issues? If so, it's easy to test: switch off bluetooth and observe...
There were performance tuning guides (esp. for Windows) that advised to turn off everything that isn't absolutely necessary. Some wifi cards were notorious, mainly due to bad (driver) design, and you'd definitely notice a dramatic difference. Computers that otherwise struggled with simple tasks would suddenly fly with the wifi turned off.
In theory switching off bluetooth will help reducing your computer doing other things than producing audio. But I doubt you will notice the difference. As said, if it were a drastic difference, you'd notice. And if you cannot notice it, what's the point?
Investing in a newer / bigger / better / faster computer will make a bigger difference.
