I just looked at Cubase and thought Christ.... so that's what's prompted this topic...

IMO, Studio One and Logic.

You're absolutely right. Cubase's GUI is pretty cluttered. Even more so Cakewalk.

I think Ableton Live. Bitwig comes second :)
Using: Cubase Pro 15, Reason 13, Tascam US-4x4HR, MODX6, DM12D, LaunchKey 49, Yamaha guitar(Pacifica 612v) and bass (BB234) and some virtual instruments and synths.

Reaper can be fairly uncluttered:

Logic is nice once you remove all the toolbars and stuff, but lack important features to be fully usable in that state, so it doesn't really count.

perhaps MuLab

I initialized Reaper and it was the most uncluttered DAW interface I had ever seen :)

How did you "look" at Cubase if you don't own it ?

I do own a licence, and yes, it is cluttered, so what ? its always been cluttered, right back to the 1980's. It has an awful lot of hidden features that I never use but professionals do. Maybe one day I will find a use for them.

I also have a licence for Studio One Pro and that can be made to look very uncluttered if you streamline it. So my vote goes to Studio One. Having said that, I think the basic GUI of Cubase also looks very nice.

Logic Pro looks pretty clean and well-organised, but I never used it so it might be all the complexity is hidden in endless menus & pop-up windows.

Yeah, I must add that to my assessment above as well. Never used Logic, but, it simply looks slick and clean. If Apple is good at anything, then it's GUI and product design.

Live with a low sequencer grid opacity looks very calm. FL Studio too if you ignore the toolbar area...

I bought a Mac last year to try Logic Pro out and its very nice. It reminded me of Studio One. The included sounds are decent workman like but not great. I loved "Drummer", its a great fun drum machine. The samplers are really good as well.

You can disable the shadowing/3D effect and remove most icons you want.

It's manageable.
