Time signature identification difficulty

I'm trying to write sheet music to this particular song (I'm a beginner at that)
I struggle to make sense of what seems to me as a dramatic "pause" at the end of each bar. At first I thought that it's clearly 12/8, but I realized that the last note of each bar is held longer.
From what I've seen comparing the original audio with what I wrote is that this "dramatic pause" lasts 3 sixteenth notes more, which if I'm not wrong would give time signature of 27/16, which seems ridiculous, and very difficult to work with for the piano player
Am I wrong when it comes to these time signatures? Or if I'm not wrong, is there maybe some way to note this on the sheet music without going into complicated time signatures?

well (without checking the vid), 27/16ths is 9 dotted 8ths... ;)

L Shankar has a raga that's in 6 3/4 which sums to 27 after all. Some of it is that idea, some of it is something else.

that track just seems to add a beat or so to the last beat of 6/4 x 2 or 3/4 x 4, and it isn't consistent. Sometime the pause is negligible.
You'd write a fermata sign over the last note/chord.

This sort of music is not played with a metronome. The next note comes only when the player feels it's due.
