I'm looking to buy a Mac Mini M1 but I have heard about bluetooth problems on the internets... is that something very commun ?
What are your experience ?

No problems whatsoever. I am using an Apple mouse and keyboard, though.

Initial connections can be a bit fiddly, or when unpairing a bt device to use with another machine. These are the only times I've had anything resembling a headache. In the beginning, I also had to pull out the hdmi cable and re-insert it, but haven't had to do that for months. My M1 mini works perfectly well now. I am going to wait and see with Monterey, though. Faster chips = more bloat, imo.

I will second this point about initial setup connections on M1 Mac Mini. The setup process is far more annoying than you might have come to expect from an Apple product. This is because Apple actually has employed a dark pattern to trick you into buying Magic Keyboard + Mouse. I have to say, it almost worked on me. If you call about the issue I am about to describe, Apple Customer care and tech support will give you this insanely long runaraound in which they pretend to have never seen the problem, and ultimately you will be referred to a Genius Bar appointment. This, for a product that will bear the shibboleth of being a 2020-released computer, in the age of COVID and public wariness about going out, should hurt Apple's reputation. But I doubt it will.
Just know that if you, like me, try to boot up for first time with just a Logitech bluetooth keyboard and Logitech Mx master2 mouse, you will not be allowed to the friendly/pretty "Choose your Language" screen until you clear a set of icons that indicate you have not, in fact, connected a mouse and keyboard. It's kind of nuts, but you absolutely NEED either a USB/cable connected keyboard *OR* an Apple Magic Keyboard, at the very least to get inside the setup process. My neighbor had an old-old Apple keyboard that still used USB 2.0 and I was able to use that to proceed through the menu options using only keystrokes.
Note that once you set up with this kind of arrangement, you are good to go with whatever mouse and keyboard you choose. I gave my neighbor back his Apple keyboard and am using my Logitech Keyboard & mouse combo with no issue, no latency, no glitches.
