not necessarily better, but cool...
prince - the beautiful ones.
the misty dixon cover is lovely
extra points for jane weaver being a hometown girl
(part of my extended group of friends from my teen years, her feller russ, was one of the djs at our local alternative night)

Pretty much all of Kicking Against the Pricks.
Belly : "Trust in Me"
Skin : "Cry Me a River"
Celtic Frost : "Mexican Radio"
Bonus enthusiasm points to Shonen Knife for the entirety of "Osaka Ramones"
Also, better than the covers, though most everyone seems to thinks the covers are the original.
Wipers : "D-7" and "Return of the Rat"

Armageddon Dildos doing Morrissey's "Every Day Is Like Sunday" ...this also happens to be a remix which is better than the cover as they first recorded it.
Numb doing Salt n Pepa's "Push It"
Bigod 20 doing Madonna's "Like A Prayer"
Spew doing Metallica's "For Whom The Bell Tolls"
There are plenty of others that I would say are as good as the originals... off the top of my head, most of the covers NIN did and Coil's version of "Tainted Love" come to mind.

i saw john frusciante, at a chilis gig, do a solo encore of "jugband blues" pink floyd.
obviously, not "better" than the original, but a beautiful moment as it was two or three days after syd had passed
shine on!
