New build question

Would I be better off with an Intel 10 core 10th edition i9 or an Intel 8 core 11th edition i9. They're otherwise very very similar (unlocked, high clock speeds, etc) and the rest of the build will be identical. While I'm trying to find a decent graphics card (for editing and CGI) I'll just be using the onboard GPU (if this matters)

I'm not at all interested in ever going back to AMD for my music machines. The new V12 8px8e core I9 showed up on new egg as I was finalizing the build. I redid it with the latest processor generation and it only went up by a couple hundred bucks. I'll be good with that.

I'm definitely going with the onboard graphics until I come across a deal for a card. I have lots of insane gamers in my family so they generally rebuild once a year and I can get a reasonable price on a card. I only dabble with video stuff so it's not a big deal. The other thread was all about "silent systems" and whether or not it's better to have multiple ssds or one big one.
I'll be using the same case and fans that I built my last system with and it is insanely quiet even with 2 mechanical drives still in There. The new guy is gonna be only ssds. 4xm.2 and 2 regular SATA ssds.
