On the foot control front, what I really want is something like a Behringer FCB1010, but smaller and preferably not Behringer. I don't need 10 switches, more like 2-3, and space is at a premium even under my desk.
Right now I'm thinking about a Disaster Area MIDI Baby 3 or a Hotone Ampero Control, with a couple of Nektar expression pedals. They're pretty close to each other in price, but the MB3 is smaller and the AC more full-featured. I can easily enough convert MIDI CC to CV for when I want to control modular stuff that way, but controlling software is probably gonna be the more common thing.
(Is Hotone "hot one," "ho tone," or "ho to ne?"

The Hotone Ampero Control looks good. I've got the Disaster Area Micro. I only glanced at the specs and the Hotone (Hoe Tone/Hot One?) one might be more flexible. I did get the Lehle expression pedal, it's super cool. I was surprised at how it worked, it's on a seesaw pivot, it just stays in the position you leave it at, there is no spring return. I just figured it would operate like an accelerator pedal with a spring.

no, expression pedals tend to hover where you leave them
