Hey there, I have been making different test into my two machines, an Imac i7 2017 and my laptop i7 2019, the result is always the same every new version of live is more CPU demanding than the last one And I believe I have discovered why, the built the basis of live in version 9 which has been developed adding features over these years, but remain older and need to be rewrote.
Every new device is added is more CPU demanding specially in version 11.
I would recommend for those who want to stay update to buy the standar version not the Suite because if not you will be forced to update your hardware too.
Ableton Live 11 performace

How do you measure the CPU usage?
Do you look at the internal CPU meter?
