Would You Write Music By Hand If You Didn't Have A DAW ?

Yes. I'd have to. If I don't make music I cant function. But with no formal training & decades of bad habits, I find audio recordings to be the most accurate method of documentation. I can't understand my own written scores when looking back later.

Using a DAW or computer makes absolutely no difference to whether I make music or not. Affects how I make music but not if I make music.
"writing by hand" is neither here nor there for me either - I used to write a lot of scores when performing with other musicians, maybe I would go back to that. Very few of those scores looked like typical old style classical western notation because few of the musicians I wrote for read common notation all that well and also there was no need or desire to be that precise.
Also that form of notation does not produce music I am all that interested in producing. But if it did, I would use it.

I still write my string parts out by hand...
I like the passive feeling of a pencil and manuscript...
But I might start writing them in a scoring program so that I can just shift everything across to the DAW...

I don't write music down, no one else is ever going to try and play it, and I don't need to write it down to remember it, so there is no need. I only even multi-track when I can't play (or operate), all the parts at the same time. Since I am primarily hardware based, I don't even need to use a DAW unless I want. Mostly I use them to record two tracks, left and right 
*Funny part is that I own (tho not all up to date) 11 DAWS or something ridiculous like that.
