So when the newer versions of MacOS came out (I'm on 10.15.7), most plugin developers said to not update because their plugins might not work...
Now its to the point that I have to update to get the newer version of Logic Pro X (I don't like Logic but I use it for work sometimes), and I'm worried some of my more esoteric and niche plugins and software won't work... For example DestroyFX's and Michael Norris' plugins.

Is it now safe to update?

For specific examples like that you'd need to go check with the developer's website. You can also search here for both the thread keeping track of everything that has been updated for whatever operating system anyone can run.

The switch from 10.14 to 10.15 was huge. The ones after 10.15 are not that huge… But as had been said before, in doubt check with the developers. Most run just fine on Monterey if they managed Catalina in the past…

Just updated yesterday to 12.5 (from 12.4)
Although I get why people are sometimes reluctant to update, I never had any problems. Be it Windows from 95 to 98 to XP to 7 to 8 to 10 to 11... or MacOS since 10 on this machine.
When an update is out I almost run it immediately. Guess I'm lucky
