I’ve heard that Apollo has the best converters but others have said rme is the best

RME has better drivers and support UAD abandons hardware earlier
dedication to flying

When it comes to round-trip latency, Apollo is not an exceptional performer (about equal to RME's USB-2 audio interfaces). ~4.9ms at 44.1k using a 64-sample ASIO buffer size.
I ran an Apollo 8 for a while.
Some folks really like the converters. I thought they made certain sounds (DI electric guitar) a little bit "tubby" sounding.
If you talking A/D D/A, Antelope is currently one of the best choices.
To get better, you have to go higher-end outboard (Burl, etc.)
Also offer great round-trip latency performance...
ie: Connected via Thunderbolt, the Orion Studio Synergy Core yields 1ms total round-trip latency at 96k using a 32-sample ASIO buffer size.
Nearly all of our professional composer clients are running Antelope audio interfaces.

Looks like some hardware can be upgraded for a price though.
I personally argued for firewire support on M1 Macs in the RME forums, and the RME employee upon being made aware that thunderbolt support means firewire compatibility is built into Apple Silicon etc. pushed it to developers who had a solution and new drivers with M1 support within months.
So yeah, RME all the way.
