Best practises to transfer DAW projects between computers and different OS

Any tips how to collaborate let's say between Windows and MacOs M1?
If I open Ableton Live project in MacOs it will say that VST2 not found. Obviously current preset is lost after I change AU/VST3 in place?

Other than stick with VST which crosses Windows and macOS. I regularly note the VST and preset in the Text Info for a track for the very reason you talk about. I know of no way to alleviate it other than have the same VSTs on both.

Okay so it will be manual work one by one (let's say 50 channels and each have 1-5 plugins) to save each preset in Win/VST2 and save somewhere externally, then open project in MacOS and replace all slots with VST3 and get the external presets and open it?

The macOS version of Live supports VST2 and VST3. You're not limited, but they have to be the same version on both. If you use VST2 in Windows, then you need the macOS VST2 version. And vice versa. Same for VST3. I used to do this all the time when my main storage was a NAS box. Now, I'm macOS-only so I use the AU versions which seem to be less problematic.

I should've said that if Live finds the same VST and version it will remember the preset. I always note presets in the edit info for the track header.

I use my Windows PC at home and my M1 MacBook Pro whist I travel and have no issues working cross-platform with Bigwig & Ableton on both VST2 & VST3.
The only issue I can think you might be running into, some plugins are only available as VST3 on M1 macs, such as Waves or Native Instruments stuff. Make sure you are using VST3 on both your Windows machine and your Mac, and you won't run into issues.
