Is it possible to randomise VST plugin parameters over time - eg, cutoff in Omnisphere or whatever - I'm using Cubase. Something within Cubase or an external plugin which could do it?

In the left Inspector there's a randomisation option, in the Midi Modifiers section.
Or use the Logical Presets, there's presets for random velocity for example.
Or you can build your own in the Logical Editor.

Hi
On a VST go to the Midi Insert section and add Auto LFO.
1) Where is says 'Controller Type' - to the right click the drop down arrow and select a control that has not been assigned for Ex Controller 118
2) Then open the VST GUI and right click on the knob you want to modulate and right click and select Learn Midi and Hit the Spacebar - this will assign it to the Auto Lfo
3) Go into Auto LFO and change the settings to your taste - the value range can be set from both ends so it only modulates a bit.
4) Instead of using a Triangle or Sin Wave you can also select the random which is super cool.
Now have some fun
