I don't have any of the issues those guys in the Apple forum you posted are having. None, nada...
So I must assume it's somehow setup related.

From my experiences with Logic 5 up to 10, these glitches are common and not related to any plugin, per se, whether built-in or AU. It appears to be related to reallocating resources, causing the glitch. The vast majority of the time, restarting playback results in perfect playback. That is, until the resource limits of the machine are reached and it's anybody's guess how long the smooth playback holds out.

That said, there may be specific plugins that grab tons of resources at importune times causing these stutters and glitches. If you find them, letting the programmers know that this happens is not out of order. They may be able to mitigate or eliminate the issue. I do see similar issues with other DAWs, only maybe not as pronounced since they are not as resource hungry as Logic is.
I started on Logic 5 with a PowerBook G4 550Mhz. I now have a MacBook Air M1 and it's ~165x faster! So, why is my music not proportionally better? :(

I only have this problem (max far right core) with Moog two synths I have, otherwise, everything else is working smoothly.
Using: Cubase Pro 15, Reason 13, Tascam US-4x4HR, MODX6, DM12D, LaunchKey 49, Yamaha guitar(Pacifica 612v) and bass (BB234) and some virtual instruments and synths.

Buffer 64 @ 44.1Khz. I have M1 base one (not Pro) though.
