While the purchase price is high, consider how long you had your "old iMac," the operating system, your user experience, and amortise the price across that.
I am a long-time mac bloke and thus disgusted at Apple post-Jobs, but if careful you can put together a fairly-priced system.
At the minute, I would choose a mac studio with an LG screen and most storage external. Or wait till March for the M2/M2 Pro mac mini.

SSDs are cheap now but compare read speeds at mwave or scorptec.
Monitors must run at the mac 'default for display' setting (no scaling), so choose pixel density carefully!!

I am not doing 3D rendering, so I got a 138ppi LG 32UD99-W because that was the density of my mac laptop and I like that size of plugin GUIs. The current model is LG 32UL950-W.

It's used for machine-learning - it's AI algorithms that get better over time in what they do (mostly recognizing stuff basically)... e.g. applications like Photoshop make great use of it - Google does too...

I use both mac and pcs though I love my macs and tolerate my pc, but I am not going to try to change your mind.

So is the general consensus to stick with Mac and never go back? (Sorry couldn’t resist lol). In all seriousness, I have been considering switching too but all the options of specs also has me overwhelmed like OP. I’m also very concerned with audio latency as I record vocals a lot with Autotune in real time.

Everyone who leaves Mac for Windows regrets it, in the end.
No one ever wishes they went to Windows on their deathbed do-overs.

I use plenty Apple products and prefer the experience.
I am quite well versed with all the alternatives in phones, computers and other, from work and personal experimentation.
But man, do I hate the company. Which makes me quite the hypocrite.

If Steve Jobs was still alive, Apple would be different.
We're not hypocrites, just making the best of the situation.
Apple customer service managers are at least as pissed off as we are.

I just hate how we have been treated as late. Yearly updates they try to force us into that turn many apps and plugins obsolete. Eventually even render hardware obsolete too. I love the products and experience of Apple products too, but I’m bitter because I miss how things were and would like to see Apple moving in a better and more user friendly direction. I also would love to see a return to them focusing more on creative apps again. It doesn’t “just work” anymore and I keep holding out that again it might.
