but I could literally walk over to Germany (and France too) and Schnitzel are really super-common there (their most typical appearance is as fast-food in combination with Pommes Frites).

In Canada you could drive for 10 hours and still be in the same province and there are 10 of those and two territories. We really don’t have a national cuisine. Apart from our First Nations peoples, we are a land of immigrants who bring their traditions. If you go back a few generations, everyone except our First Nations is from away. Schnitizel by helium balloon in Canada is at least exotic if not authentic.
