I'd like to try something barebones, which still has all the functions one expects from a DAW. Which DAW is the least featureful?

You want the LEAST capable DAW, that "still has all the functions one expects from a DAW"?

I haven't smoked enough to be on KvR today apparently.

I wanted a soft that isn't bloated with stuff that I never use. The above recommendation from ras.s is just what I was looking for. Maybe the smoking bit is why you didn't get it?

I think it really depends what one considers "all the functions one expects from a DAW".

Energy XT? Now beta 64 bits.

Reaper.

Quickest to download and install. Almost completely barebones. You can also do a portable installation.
Ableton Live | Pro Tools | Launchpad X | Numark Party Mix II | Arturia MINILAB 3

Ableton Live wihout a doubt has the most minimalist GUI and if you stick to it's devices you have the most minimalist experience

+1
I also think of Ableton Live as a minimalist. I also suggest Reason, Bitwig and FL Studio.
Using: Cubase Pro 15, Reason 13, Tascam US-4x4HR, MODX6, DM12D, LaunchKey 49, Yamaha guitar(Pacifica 612v) and bass (BB234) and some virtual instruments and synths.

Have a look at: https://www.mutools.com/mulab-app-downloads.html

Can be as simple or complex as you like
Sound C loud
Band C amp
Clicks and pops is all I get

there used to be a daw that only showed one track at a time - a bit like those minimalist typing programs. I think it was German - cannot seem to find it but was unique in its approach

EDIT aah it is this one https://www.multitrackstudio.com/ which others have mentioned and is Dutch not German

Dang! I thought he was German too. MTS has everything, but it's too closed and tape-machine oriented for my taste. I feel like I'm poking a bear when I try to use it.

I use Mulab, which is extremely full featured, but everything is well tucked away. It featured a fully-modular backend, like the Grid in Bitwig, only betterer. :) It just works like you'd think a DAW should.
I started on Logic 5 with a PowerBook G4 550Mhz. I now have a MacBook Air M1 and it's ~165x faster! So, why is my music not proportionally better? :(

mothra can't read minds. However, I can read minds and I know what you want is Babya Logic.
Surely there must be consensus by now...

MuLab and Podium are very minimalist.
