I do have a solution and it's working really well, that's not to say I don't appreciate the responses in case there's something wrong with Kontakt or the Wasapi set up. I did try Wasapi output on another application the free version of Resonic, and that gave an error, but played anyway ?
Regardless the solution with Voicemeeter is working well aside from it not storing my settings when it loads first time. I've saved them, but it's only a minor issue.

If I understood the original question properly:
The loop-back recording of something like RME's Total-Mix (as mentioned previously) would seem to be the most elegant solution.
You could also do something similar by routing digital outs (Lightpipe or S/PDIF) to digital inputs.
If you're going to have two audio applications open simultaneously, the audio interface driver has to be multi-client.
