How to record left and right hands (<C3>) to different tracks (live)?

You can arm both tracks and put a Note Filter on each track with the desired key range.

Is there a way to do this in Bitwig? I couldn't find it.. In Cubase it's pretty straightforward.

Not really... maybe you want to export the midi so you want separate tracks?

You can find the Note Filter device under Note FX.
