I would like to fly a Moog Minitaur with the Keystep 37.
Only it is impossible for me to use the latter's keyboard (mini keys).
Is it possible to connect a 61-note master keyboard (with normal keys) to the Keystep 37's midi in?
If so, could we still have access to the keystep 37 functions (Arpegitator, sequencer, chord, etc...)?

I have the "standard" Keystep and, afaik, it doesn't apply its functions (arpeggiator, sequencer, etc) to the incoming midi (even if it's on the same midi channel). I remember I tried connecting something to the midi in of the Keystep, but I don't remember what I was trying to do... but if the Keystep was able to process the midi in with its functions (arpeggiator, sequencer, etc) I'd remember it for sure.
If you can live without the built-in sequencer and without aftertouch, a Novation Launchkey would do the job; otherwise there's the SL series with sequencing built in (and I guess all the other features) and aftertouch, but it's more expensive.
If you only need to control a Minitaur, the aftertouch is not needed and you'll probably appreciate a few knobs on a master keyboard, so you can can avoid pressing the glide button to access some of the hidden controls of the Minitaur.
I don't know where you're located, but if you're handy with diy electronics (or you know someone who could build things for you), you could consider buying a "midi arpeggiator" box like the Arpie https://six4pix.net/product/arpie/ or maybe build a Gizmo https://cs.gmu.edu/~sean/projects/gizmo/ ; I didn't try any of those, though!

Having an arpeggiator and sequencer is very important to me indeed.
The Novation could certainly meet my needs, but a little expensive nonetheless.
Concerning the modules to be assembled, it's not even really my thing.
