I've been listening to the GPO demos again and have noticed that all of the sounds seem to be coming from the left and right and the center seems empty.
No sounds are centered.
Is this a choice that all of the composers are making or is it somehow the way the GPO samples work?

The panning in GPO is based on standard orchestral panning. All percussion, keyed instruments, and some of the solo instruments are panned dead center. Most however are not. For example... Of the 9 ensemble violins three are far left, three are more moderately panned in the left channel, and the other three are around center. This gives them room and space in the mix when used together.
