I also think that most of Dillon Bastan's work qualifies as "gems". It is Max for Live only.

My favorite Gem is Max/MSP and Bitwigs Grid. I can do anything with them… Even redo whatever is listed here but better…

My hidden gems are mostly about workflow enhancement, more so than the instrument/effect itself:
Minimal Audio Fuse Compressor - OTT on steroids
Wavesfactory Specter - fast, frequency-specific saturation
Wavesfactory Trackspacer - fast sidechaining
XLN Life - killer for creating novel drum fills
Baby Audio Spaced Out - delay and reverb in a single, quick-to-configure interface
Minimal Audit Morph EQ - may be the one hidden (or not so hidden) gem I own that does something I've not seen done particularly well in any other tool.
Morph EQ aside, there's nothing really hidden or special about any of these other than how fast you can accomplish the task they were designed for.

I like morph EQ, in particular as I got it for free but it is for me the definition of a workflow improvement, not an innovation. To be noted that if I am not wrong, U-He filterscape VA allows to have these eq morphing by voice.
To my knowledge this is the only synth to allow that (except maybe Ableton m4l or the grid in Bitwig).

I'm using the CM Microfuse which is a (not very) slimmed down version of Diffuse by Surreal Machines. (Saving my pennies for Diffuse.)
