indeed, what are currently the best tools for a polyphonic pitch-to-midi transcription,...and at what degree are they usable ?

working with stems of separate audio wise instruments, it would be very useful for creative process, to transcribe if possible, polyphonic instruments like piano, guitar, organ, synth. into midi datas, even if they would need manual adjustments afterwards ?

This is really good, and free;

Like all of these things it's far from perfect with things like guitars, but much closer than other things I've tried.

RipX DAW treats audio and MIDI pretty much the same and went from something I used for sound design to an incredible all-around tool. It also happens to excel when you toss some polyphonic audio into it and then just export it as MIDI. The processing times are pretty long presumably due to cranking up the quality of the detection.

I also have Melodyne studio which is nice as some DAWs integrate it. It can do nothing remotely like RipX DAW for polyphonic material, though. Nor, I suspect, should it be expected to as that is not it's main focus. This gave me a really good new idea to test out though, so thank you for inspiring to monkey with it again.

Not sure if you got a clear answer to this, but yes. Monophonic and Polyphonic material MIDI export.
