Cubase 7.5 for me. The fonts on windows were so good. The newer version changed the fonts and they look very times new Roman-ish.

By the way, the UI I like the most is from that Bitwig for which I made the theme, question closed,

I use Reaper since it’s not rental only but I really like Cakewalk (it’s going away) and the newer Sonar but it’s rental only. So Reaper it is.

I'm torn on this.
I think Logic is the most aesthetically pleasing, and I tend to want other DAWs to look like Logic when I use them.

But UI goes beyond aesthetics, and I don't think Logic has the most intuitive UI for navigation, coming from other DAWs (Studio One, Reaper, Bitwig, Ableton Live) prior to having a Mac and getting Logic, Logic felt backwards with a lot of UI aspects. There's so many things that aren't where I'd intuitively look.

..and I think an intuitive experience is critical when considering what the best UI is, at any point in time.

I think Studio One comes out on top overall.. it leans quite strongly into Logic-esque aesthetics, whilst providing a more intuitive and user-friendly experience. imo.

Bitwig looks fantastic too, and nails the user-experience side of things, but my personal tastes prefer the Logic aesthetic, so I wanted to choose an option that was along those lines.. if I didn't have this bias, then I think I'd have selected Bitwig in its current form for the best UI.

^^^ Bitwig already has a theme inspired by Logic, and you might find the Frost one likable depending on your taste. https://github.com/Berikai/awesome-bitwig-themes

I loved Logic 5. Not for it's overall workflow, per se, but for it's ability to stuff a crap ton of GUI onto a 1024x768 screen. Once Apple took over mid-6, it's been downhill ever since.
I liked Emagic’s Logic look too, especially 5.

Version 4/5 was really nice. I liked the futuristic 'space' theme all over the design. S1 and S2 were (and still somehow) masterpiece synths.

I also liked v9. I had a hackintosh setup back then and I enjoyed v9 style. The workflow haven't changed so much from v9 and I think I got used now to the look of v11. The features are many and the quality of effects are second to none (of the other DAWs). The best value for money DAW IMO (on Mac). If Apple releases it to the Windows crowd with this price, I think it would take some of the other's DAWs market share!
Using: Cubase Pro 15, Reason 13, Tascam US-4x4HR, MODX6, DM12D, LaunchKey 49, Yamaha guitar(Pacifica 612v) and bass (BB234) and some virtual instruments and synths.
