Probably Keyscape, particularly the LA Custom C7 pianos.

For me, it depends on the use case. I like to sketch with AIR's Mini Grand, but if I had to pick one for someone else, it would be MSoundFactoryLE (currently on sale) with MeldwayGrand and MonasteryGrand included -- crazy good value.

Depends what the use case is. Is it going to. W a classical piece heard in isolation? Or a piano track as part of a rock/pop arrangement with a bunch of other things?
If it's in Isolation I would go with a Pianoteq, if it's just piano in a track I really like the Pianos in the Korg Triton plugin

I'd say NI Noire.
I've seen NI Grandeur mentioned by many people. Oldie but goldie.
Addictive Keys piano sounds good to me.
Other honorable mentions are some UVI and VSL pianos, but those I didn't have a chance to try because of the copy protection

Whatever you do, try the freebies first...there are some good ones out there. Heck one that came with my DAW is good...but I liked Hammersmith's freebie the best for a grand piano. Ivy 162 is also good.
Upright for me is easy...Sampletekk's "Rain Piano." Can be had on sale very inexpensively. I don't recall a good free one out there, but I'm sure there are. Just when I found this one, I didn't have interest in others. IIRC, Kontakt's Factory upright was good.
