If I had a budget if 300 Euro, what would be a good choice for a used mac for music making?

A used Mac mini 2020 M1, 8 GB RAM, 256 GB SSD is probably close to your price point.
Though, you need to decide if that‘s enough power for what you want to do with it.

Any of the Apple Silicon Macs, really (M1, M2, etc.). Most likely buy used to get the most bang for your buck. If you can get one with at least 16GB of RAM that would be preferable. Storage amount doesn't matter much as you can expand with a USB-C SSD for rather cheap.
