I own a Mac Studio and have done for a while , is it worth upgrading to the new one with m3 ultra chip

if a person has to ask that, then probably: No !

M3 ultra for usecases where MUCH RAM, 256GB, 512GB, and/or the special graphic codecs do make sense. Thats not many usecases in the audio world that would win from the M3ultra, i´d say.

M3 is a bit of a dud. It's mostly just a 3nm die shrink.
M4 is where it's at.

The M3, from what I've seen, would be better for video editors.
I got the M4 Max in March. Powerful machine. I can put heavy, latency inducing plugins on a track, and there's no latency when I play my keyboard. It was too expensive to upgrade the RAM/Cores, so I have the base 36 gb RAM, and a 1 tb SSD.
