Can somebody describe to me where I find this function, on eXT, or EXT64?
This youtube video shows it very easily and intuitively placed it in the Tempo window on the IOS app,
but it is not there in the windows version.

Not there (yet) in EXT64, but Shuffle exists per track in energyXT 3 (and energyXT 2.7).
It can be found in the 'track toolbar/header' (?) in the sequencer, which can be shown/hidden by clicking on the 2nd icon on the left of the small 'sequencer toolbar' (?).

Bummer.
Those are the two things that I need at the same time.
Swing function and x64.
If I didn't need swing it would be the goto super DAW hands down.

When I gave my answer, there was hope that EXT64 would get further developed.
That hope now died with the beginning of the new year.
But who knows - nobody expected EXT64 at the time it arrived.
Might be we will see a EnergyXT64 in 5 years or so.
But I will not wait for that to happen...
I took your comment as an opportunity to finally download and test jBridge Demo version.
I bridged 64 bit VSTs for a 32 bit host.
I used energyXT 3.0 to load the jBridged 64 bit VSTs.
I only tried to load and toy around with the 'VeeSTeeExtified' version of PG-8X (PG-8X-64Ex.32.dll) and that worked without any problems.
So maybe worth to try out?

I didn't know that was possible.
To go backwards from 64<32.
That would be worth it.
There are only a few players in the DAW game that offer what XT does.

If anybody is interested, MuLab 10 is out now.
It's somewhat similar to Energy XT (I'm not sure, but I think it only loads 64-bit VSTs and VST3s).
I'm an Energy XT fan, but I only mention MuLab in case EnergyXT get totally abandoned.
This year I bought a MuLab license. I don't regret it, but I didn't realise that it couldn't do 32-bit.
I got kinda spoiled by REAPER. But both EnergyXT and MuLab have easier MIDI editing in my opinion (than REAPER).
Anyways, sorry for interrupting. Hopefully EnergyXT will get some dev love again. Who knows.

Just to clarify, MuLab 10 loads VST, VST3 and CLAP plugins and both 32 and 64 bit MuLab Windows versions are now available (although the 32 bit version is deprecated). That could possibly be combined with EnergyXT, to either use Mulabs track swing functions in Ext64, or bridge all your 64bit VST's into EnergyXT 32.

What you selected is called a part and therefore the toolbar/header shows functionality available for a single part (of which, as you know, you can have as many as you like on one track).
When you 'deselect' a part by clicking into an empty area - as you did - then the toolbar/header shows track-specific settings/functionality for the currently selected track.
This will become more obvious, if you just click on a track, which is the area left of all the parts of that track, where the loaded plugins is shown by name and where you can mute, solo etc. the whole track.
But well, coming from other DAWs, there's always some learning curve.
