Ok, that explains what happened...its for extracting chords from audio, not midi...getting it to identify your chords from midi is super easy, just send us the midi file and we'll have a look...

Are you able to import your own multi-samples?
Edit: My Bad, I just found the answers to my question...

Better Yet, When importing multi-samples does Notes keep them as an SFZ or does it convert them into a proprietary format?

Right now, you can import in your existing Decent Sampler and sound font instruments...which Notes converts to an internal format. Since you already have the original instrument xml, you should be fine.
In terms of creating multi-sample instruments from scratch, yes you can do this, but right now its only available to sound designers, as the interface is a bit rough and ready. During recording for Notes, we mostly used SampleRobot and exported sound font instruments from there, which we then imported into Notes. Its a big job creating a multisample editor that is user friendly and not janky.
A half way point between fully evolved multisample editor and a simple one shot sampler, is to just drop samples on the instrument engine and have it automatically create round robin groups for each dropped sample..this gives you an easy path to the "multi-keys" technique that is popular right now, where each group has just one sample and it round-robins through the groups each time you play a key.

They just released a 1.1 beta that has a bunch of new features including "smart randomization" for chords, sounds, and effects that works extremely well. This has become a pretty great idea box.
