I do both, first mixing on headphones, either Sennheiser HD 265 linear or HD 280 pro, then on speakers and mix on headphones is always good, I only check on speakers, too.
Best is what works best for you and what you are used to.
To avoid too much mids or too little low end, I also check on smart phone and laptop speakers

You can only mix with headphones, and I've done it before. Apparently, it's a good experience and the results have been conclusive, but the trick is to have several pairs of several professional headphones for reference. That's the strategy I used when I didn't have studio monitors. You just need to train your ears with lots of high-end headphones and be careful not to mix long sessions at high volume, as this can damage your hearing.

I mix on Beyerdynamic DT880s going through Sonarworks Reference and Slate VSX. It's worked well for me so far.

Does she drive a 2016 Subaru BRZ by any chance? I've spent a significant amount of time in one and the sound is near identical to the electric car in VSX.

No, she's now driving a Genesis GV70 EV. She loves a nice car. I couldn't care less, though I appreciate it.

Can't really vouch for either extreme myself, but I've always mixed with headphones, so it's just what I've gotten used to.
My solo projects:
Hekkräiser (experimental) | MFG38 (electronic/soundtrack) | The Santtu Pesonen Project (metal/prog)
