Question 1
How to record all individual audio tracks of Elektron gear in Reason via the Overbridge VST3 plugin?

The recorded audio is a bit delayed and changing reasons latency settings doesn't help.

While I do not know the Overbridge VST Recording several Tracks at once in Reason is doable.
You need to do the setup:
1. Route each part you want recorded to a Mix Channel (I assume Overbridge has many outs)
2. Click the Record Source button on the front of the Mix Channel/s
3. Create Audio Tracks for each Track you want to record.
4. Assign each of the Sources to the desired Track
5. Set each of the Audio Tracks to Record
6. Do the record thing and you should have what you wanted.
This is exactly the kind of routing one would expect in the real world.

But I have latency issues with the recorded audio tracks. The recorded audio is about 1/10 second delayed. Changing Reasons internal latency settings doesn't really help, changing asio driver (to e.g. Asio4All) neither. The USB cable is not the elektron original, could this be an issue?

All audio recorded to a DAW will have latency; it is physics.
If you RTFM on Audio IO Prefs, you can set the offset to resolve that automatically.

I don't own the hardware, but my understanding is that Overbridge is a unique case, because it's a VST that can output audio from the Elektron hardware independently of the audio interface. If you're not also using the Elektron hardware as your primary audio interface, Reason's audio settings are not going to have the desired effect on the recorded latency (*)
Try adjusting the reported latency on the mixer channel of the Overbridge plugin (accessible from the back of the rack when inserts are expanded). If that doesn't work, try the channels for the separate outputs.
(*) There might be an effect but then all other audio will be recorded with the wrong offset unless your audio interface and Elektron device coincidentally have the same latency.

I hope it is not too much sample value - it needs about +4000 samples that it is in perfect sync!
