How much of a difference does a high-end audio interface really make?

Coming from someone who paid for an Apollo Solo, it makes no difference. I needed to upgrade because my first interface only had the RCA inputs so my speakers would buzz. Thought I needed the UAD, but the focusrite would have been just as good. Especially because computers now are strong enough to handle vocal processing on its own, and uad plugins, while being top of the line, aren’t special.

RME only for me, nothing else. More than sastisfied.I had M-Studio and Focusrite before, RME is a different league. Not sure whether their new products are still good, because products from Germany are said to be generally bad today.
I experienced it with Sennheiser recently,bought the same product I bought 7 years ago, quality today is not acceptable.
I would buy an older 2nd hand RME Interface

RME is one of the very few companies I can always recommend. You can buy anything from them blindly and it will be top notch, not only the audio interfaces. I still prefer their Quadmic preamp over anything else. Clean, reliable and it will make the most demanding condensers work where other preamps fail.

I use the same rme multiface ive had for 30 years. Was overjoyed to discover I could still use it with my new laptop using a cheap ass pcie thunderbolt dock
