I think I can mimic the harmony parts it comes up with, ( if they sound right) faster than I would be able to figure it out, not having any music theory.

Creating harmonies from the melody is something I do all the time. If you already have Melodyne, you can get good results with it, but they will sound very unnatural in isolation. There is a new and IMO much better alternative in Vovious that sounds far more natural and creates much more natural (but still not perfect) harmonies. I highly recommend checking it out if you work with vocals a lot. Be sure to add some variability to the pitch and timing of the harmony part(s) to get some more natural separation from the lead melody.

If you want to take it a step further and get even more natural harmony parts, render your Melodyne-generated (or whatever pitching shifting app you use) to a .wav file and use an AI voice resinging model to essentially replace it with a "real" voice. This will give you some natural variability and different voice timbres. Of course, some people will be opposed to this idea since it's AI and that's fine.

Yet another option is to create the fake harmonies with Melodyne (or whatever) and just use that as a guide to sing the harmonies yourself - this is the way I have typically done it over the years for singers who are not great at coming up with harmonies. After we track the melody, I re-pitch it for the harmonies, bounce it to audio, and let the singer "learn" the part or I just keep it low in their headphone mix and they just sing along with it for singers who want that crutch.

Here's an example (cheesy Christmas song warning) of harmonies that I created using both methods. The song has around 40 vocal tracks in all, with many of the harmonies created using the re-pitching method and Avonlea singing the harmony parts. I also used an AI app to generate doubles or replace a few of the harmonies for thick and lush harmonies with a mix of different female and male (the low "aahs" before the last chorus) voices.
