I’m looking for experimental/unconventional delay plugins, like Emergence or Habit (which isn’t a plugin, but still serves as an example). What would you suggest?

Unfiltered Audio's Sandman Pro is a banger. A handful of weird and wonderful modes, it was the first plugin I was aware of that offered seamless delay time switching without pitch/click artifacts (think this is a lot more common now though), and you can do sampler style loop manipulation effects by freezing the buffer and messing with its start/end points.

edit: just remembered you can also do really gross timestretching/granular effects by abusing the seamless delay time tweaking I mentioned (called "Instant Mode" in the plug)

Shout out for the free Valhalla Supermassive too. A lot of plugs are really good at turning a sound from a delay into a reverb via diffusion in the feedback loop, but Supermassive is really good at doing it the other way around too. Really hard to describe but you can have a gigantic reverb with no obvious 'echoey' qualities then sort of 'catch' it so it sounds looped by morphing back to delay.

might as will drop in Late Replies too as it can get ridiculously complex if you want by having no limit to nesting of delays nor much of a limit to the effects you can apply to those delays.

Spacer from Spectral Plugins was a nice delay/granular/reverb toybox, they made all their plugs free but appears the site has now gone so maybe a non-starter...
