You might consider looking into a VSTi that can actually do native true MPE.
What you are doing is a work around for MPE in instruments that don't normally support it.
I will say the Ample sounds very good, and your technique for bends is quite smooth too.

And this way hammer-ons and pull-offs behave properly too.

Great video; thanks! I tried to mimic this setup in Mainstage, but I'm unable to set it up so that the channel strips receive on only one channel. Anyone have any advice? Thanks.

@steve681 You can use a Mainstage MIDI FX to do this. In the channel strip, click on where it says MIDI FX (above Input) and select Scripter. In the resulting popup where it says Default Preset, click on it and select App Presets > Channel Filter. The popup will change to include a Script Parameters section at the bottom, with the single parameter Pass Only Channel. Select the channel (range 1..16) you want for that strip.
What's going on is that Mainstage supports Javascript scripts that allow considerable editing of the MIDI input stream before it's passed on to the plugin, and it comes with various prewritten scripts (like this Channel Filter).
