It all depends on what combination of plugins you are using. Some plugins use more DSP than others. Plus, the actual project sampling rate that you are using has an effect too. The most economical is 44.1k(I do all my recording @ 24/44), of course, at 88K your DSP usage will be twice that of 44k. At 24/44, I can get as many as (14) LA2A's on one card. The Nigel plugin (all 7 modules) is the most DSP intensive. I can squeeze (3)instances on one card.
A typical real world session might look like this, with one card (92% DSP), @ 24/44:

(3)LA-2A
(2)Pultec EQ's
(2)1176LN
(1)RealVerb
(1)DreamVerb

I bought my first card a couple of years ago, (Mackie UAD-1), and bought a cheap Project Pak, last June, just for the added DSP. For my little project studio, I have all the DSP I need now
Any plugins that you have authorized, on your system, can be used on up to (4) cards, at a time. So in your case, with the Ultra Pak, if you decide you need more DSP, you can buy a Project Pak ($340.00) and double your DSP. All your Ultra Pak plugins will work on both cards and the DSP load is automatically and dynamically shared between both cards as you add plugins, into your projects. Also, if you are using an audio host that has track freeze, you can freeze your UAD-1 tracks and free up the DSP, for other uses.
